Instructions

  1. Bring a large pot of salted water to a boil (about 1 tablespoon salt per 4 quarts of water). Add 8 ounces pasta and cook according to package instructions until al dente, usually 9-11 minutes. Stir occasionally to prevent sticking.
  2. While pasta cooks, heat 2 tablespoons olive oil over medium heat in a large skillet. Add minced garlic and sauté for about 1 minute until fragrant but not browned, stirring frequently.
  3. Reduce heat to low and add 5 ounces Boursin cheese to the skillet. Stir gently as it softens and melts into the olive oil and garlic, about 2-3 minutes.
  4. Slowly pour in 1/2 cup milk or half-and-half, stirring constantly. Heat gently without boiling until sauce is smooth and velvety.
  5. Drain pasta, reserving about 1/4 cup pasta water. Add pasta to skillet with sauce and toss to coat evenly. Add reserved pasta water if sauce is too thick.
  6. Season with salt and freshly ground black pepper to taste, adding gradually due to saltiness of Boursin. Toss again to blend flavors.
  7. Remove from heat and sprinkle with chopped parsley or basil. For extra richness, add grated Parmesan cheese and toss once more.
  8. Serve immediately while warm and creamy.
