A creamy, spicy buffalo chicken dip balanced with tangy blue cheese crumbles, perfect for parties and game nights. This easy-to-make dip combines shredded chicken, cream cheese, buffalo sauce, and cheeses for a rich, crowd-pleasing appetizer.

Ingredients

Scale
  • 2 cups shredded cooked chicken (about 280 grams), rotisserie chicken recommended
  • 8 ounces cream cheese (226 grams), softened
  • 1/2 cup buffalo wing sauce (120 ml), classic Frank’s RedHot recommended
  • 1/2 cup blue cheese crumbles (75 grams)
  • 1/4 cup ranch dressing (60 ml), dairy-free ranch optional
  • 1 cup shredded cheddar cheese (115 grams), plus extra for topping
  • 1 teaspoon minced garlic
  • 2 tablespoons sliced green onions
  • Optional: celery sticks and tortilla chips for serving

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine softened cream cheese, buffalo wing sauce, and ranch dressing. Blend with a hand mixer or sturdy spoon until smooth and creamy, about 2-3 minutes. Add more ranch dressing if mixture is too stiff.
  3. Stir in shredded cooked chicken and minced garlic, ensuring chicken is well coated.
  4. Fold in blue cheese crumbles and shredded cheddar cheese, reserving some cheddar for topping.
  5. Spread the mixture evenly in an 8×8-inch (20×20 cm) baking dish. Sprinkle remaining cheddar cheese on top.
  6. Bake for 20-25 minutes until bubbly and lightly browned on top.
  7. Remove from oven and garnish with sliced green onions. Serve hot with celery sticks and tortilla chips.

Notes

Let cream cheese soften at room temperature for at least 30 minutes for smooth blending. Use warm chicken for easier shredding. Cover dish with foil for first 15 minutes of baking to prevent over-browning. Assemble ahead and refrigerate up to 24 hours before baking. Adjust buffalo sauce to control heat level. For a lighter option, substitute Neufchâtel cheese for cream cheese. Blue cheese can be swapped with feta for milder flavor.
