These creamy buffalo chicken stuffed sweet potatoes are a quick and easy dinner that combines tender sweet potatoes with a tangy, spicy buffalo chicken filling, topped with melted cheese and fresh green onions. Perfect for busy weeknights, meal prep, or a crowd-pleasing comfort meal.

Ingredients

Scale
  • 4 medium sweet potatoes
  • 2 cups cooked chicken, shredded
  • ½ cup buffalo hot sauce (e.g., Frank’s RedHot)
  • 4 ounces cream cheese, softened
  • ½ cup shredded cheddar cheese
  • ¼ cup crumbled blue cheese (optional)
  • 2 green onions, sliced
  • Salt and black pepper to taste
  • 2 tablespoons butter, melted
  • Ranch or blue cheese dressing for drizzling (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  2. Wash and dry the sweet potatoes. Prick each several times with a fork.
  3. Brush the sweet potatoes with melted butter and sprinkle with a little salt.
  4. Place on the prepared baking sheet and roast for 40-50 minutes, until tender when pierced with a fork.
  5. While the potatoes roast, make the filling: In a medium bowl, combine shredded chicken, buffalo hot sauce, and softened cream cheese. Mix well.
  6. When the potatoes are done, let them cool for about 5 minutes. Slice each open lengthwise and fluff the flesh with a fork.
  7. Divide the buffalo chicken mixture evenly among the potatoes. Top with shredded cheddar cheese.
  8. Return the potatoes to the oven for 5-7 minutes, until the cheese is melted and bubbly.
  9. Remove from the oven and top with crumbled blue cheese and sliced green onions. Drizzle with ranch or blue cheese dressing if desired.

Notes

For a quicker version, microwave the sweet potatoes instead of roasting. To make it vegetarian, swap chicken for shredded jackfruit or chickpeas. For dairy-free, use dairy-free cream cheese and skip the cheddar and blue cheese. Leftovers can be stored in the refrigerator for up to 4 days and reheated in the oven at 350°F for 10 minutes.
