This creamy, tangy, and spicy buffalo chicken dip is made in the Crockpot with cream cheese, blue cheese, and shredded chicken. It’s the perfect party appetizer that stays smooth and luscious from the first scoop to the last.

  • 2 (8 oz) blocks cream cheese, softened and cut into cubes
  • 2 cups cooked, shredded chicken
  • 1 cup buffalo wing sauce
  • 1 cup ranch dressing
  • 1/2 cup crumbled blue cheese, plus more for topping
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • Celery sticks, for serving
  • Carrot sticks, for serving
  • Tortilla chips, for serving
  • Baguette slices, for serving

Instructions

  1. If not using rotisserie chicken, poach 2 boneless, skinless chicken breasts in simmering water for 15-20 minutes until cooked through. Shred with two forks to yield about 2 cups.
  2. Let the cream cheese sit at room temperature for 20-30 minutes, or microwave in 15-second bursts until soft.
  3. Add the softened cream cheese, shredded chicken, buffalo wing sauce, ranch dressing, crumbled blue cheese, mozzarella, and cheddar to the slow cooker. Stir until well combined.
  4. Cover and cook on low heat for 2 hours. After 1 hour, give it a good stir.
  5. After 2 hours, stir again. The dip should be smooth, thick, and completely combined. If too thick, stir in 2-3 tablespoons of milk or chicken broth. If too thin, cook uncovered for another 15-20 minutes.
  6. Just before serving, sprinkle another 1/4 cup of crumbled blue cheese on top.
  7. Keep the Crockpot on the ‘warm’ setting for serving. Serve with celery sticks, carrot sticks, tortilla chips, or baguette slices.

Notes

Don’t overcook the dip; low and slow is key. Use full-fat cream cheese for best texture. Shred your own cheese for smoother melting. The dip tastes even better the next day.
