Instructions

  1. Peel and slice the ripe bananas into ½-inch thick rounds.
  2. Place banana slices in a blender or food processor. Add vanilla extract if using. Blend until ultra-smooth and creamy, scraping down the sides as needed.
  3. Spoon the banana mixture into popsicle molds, leaving a small gap at the top. Insert popsicle sticks and freeze for at least 4 hours or overnight.
  4. In a double boiler or microwave-safe bowl, combine chocolate chips and coconut oil. Stir gently as it melts until smooth and glossy.
  5. Remove popsicles from molds by dipping the bottom of the mold in warm water for a few seconds if needed. Holding the stick, dip each popsicle into the melted chocolate, swirling to coat completely. Optionally, sprinkle crushed peanuts on the wet chocolate.
  6. Place dipped popsicles on a parchment-lined tray and freeze for 30 minutes to set the chocolate shell.
