  • 4 large ripe peaches, halved and pitted
  • 1 cup (about 240 grams) mascarpone cheese, softened to room temperature
  • 3 tablespoons honey, preferably mild floral variety like clover or acacia
  • 1 teaspoon fresh lemon juice
  • 1 tablespoon olive oil, for brushing peaches
  • Fresh mint or basil, chopped finely (optional garnish)
  • Pinch of ground cinnamon (optional)

Instructions

  1. Rinse peaches under cool water and pat dry. Cut each peach in half and remove the pit carefully. Brush the cut sides lightly with olive oil to prevent sticking during grilling.
  2. Preheat grill or grill pan to medium-high heat, around 375°F (190°C).
  3. Place peaches cut side down on the grill. Grill for about 3-4 minutes until golden grill marks appear and peaches soften slightly. Flip and grill the skin side for 2 minutes more. Peaches should be tender but hold their shape.
  4. While peaches grill, combine mascarpone, honey, and lemon juice in a bowl. Stir gently to create a smooth, creamy mixture. Add a pinch of cinnamon if desired.
  5. Transfer grilled peaches to serving plates. Spoon generous dollops of mascarpone mixture over each peach half. Drizzle extra honey on top and garnish with chopped mint or basil if using.
  6. Serve immediately while warm.

Notes

Choose peaches that are ripe but firm to avoid mushy texture. Brush oil sparingly to prevent flare-ups. Keep mascarpone at room temperature for easy mixing. If mascarpone mixture is too thick, add a splash of milk or cream to loosen. For dairy-free version, substitute mascarpone with coconut cream and honey with maple syrup. If grilling for a crowd, keep finished peaches warm in a low oven (200°F/95°C).
