A quick and easy breakfast bowl that’s creamy, nutty, and naturally sweet, packed with protein from real ingredients like milk, peanut butter, and Greek yogurt. Ready in under 15 minutes, it’s perfect for busy mornings or meal prep.

  • 1 cup (90g) rolled oats
  • 1 cup (240ml) milk (whole, 2%, or unsweetened oat/almond milk)
  • 1 cup (240ml) water
  • 1 large ripe banana, mashed
  • 2 tablespoons (32g) creamy peanut butter (natural, no added sugar)
  • 1/4 cup (60g) plain Greek yogurt (full-fat or 2%)
  • 1/2 teaspoon ground cinnamon
  • 1 pinch salt
  • 1/2 teaspoon vanilla extract (optional)
  • Optional toppings: sliced banana, drizzle of peanut butter, chia seeds, flaxseeds, chopped walnuts, maple syrup

Instructions

  1. Mash the banana in a small bowl with a fork until mostly smooth. Set aside.
  2. In a medium saucepan, whisk together 1 cup milk and 1 cup water. Bring to a gentle boil over medium-high heat.
  3. Once simmering, stir in 1 cup rolled oats and the mashed banana. Reduce heat to medium-low and stir until banana is evenly distributed.
  4. Cook for 5 minutes, stirring every 30-45 seconds, until oats are thick and creamy but still have a little liquid visible.
  5. Add 2 tablespoons peanut butter and a pinch of salt. Stir until peanut butter is completely melted and incorporated, about 30 seconds.
  6. Remove from heat. Stir in 1/4 cup Greek yogurt and 1/2 teaspoon vanilla extract (if using) until smooth.
  7. Let oats rest in the pot for 1 minute to allow starches to settle and flavors to meld.
  8. Spoon into a bowl and top with sliced banana, a drizzle of peanut butter, cinnamon, and any other desired toppings. Serve warm.

Notes

For thicker oats, use 3/4 cup milk and 3/4 cup water. For thinner oats, add an extra 1/4 cup liquid. If oats become too thick after cooking, stir in a splash of warm milk or water. To reheat leftovers, add 2-3 tablespoons milk or water per serving and microwave for 1-2 minutes, stirring halfway. The recipe is naturally vegetarian; for vegan, use plant-based milk and yogurt. For gluten-free, use certified gluten-free rolled oats.
