  • Salt and pepper, to season
  • 2 tablespoons olive oil (extra virgin preferred)
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1/3 cup chopped sun-dried tomatoes (packed in oil, drained)
  • 1 cup heavy cream (240 ml)
  • 1/2 cup chicken broth (120 ml)
  • 1/2 cup freshly grated Parmesan cheese
  • A handful of fresh basil, chopped
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon freshly squeezed lemon juice

Instructions

  1. Pat the chicken breasts dry with paper towels, then season both sides generously with salt and pepper. (5 minutes)
  2. Heat a large skillet over medium-high heat and add olive oil. Wait until shimmering but not smoking. (3 minutes)
  3. Add chicken breasts to the skillet, leaving space between each piece. Cook without moving for 4-5 minutes per side until golden brown and cooked through (internal temp 165°F / 74°C). Remove and set aside. (10 minutes)
  4. Lower heat to medium and add butter. Once melted, add minced garlic and sauté until fragrant, about 30 seconds. Add chopped sun-dried tomatoes and cook for 1-2 minutes. (3 minutes)
  5. Pour in chicken broth and heavy cream, stirring well. Let sauce simmer gently until slightly thickened, about 3-5 minutes. (5 minutes)
  6. Stir in freshly grated Parmesan cheese until melted and smooth. Add red pepper flakes if using, and lemon juice. Taste and adjust seasoning. (3 minutes)
  7. Return chicken breasts to the pan, nestle into the sauce, spoon sauce over top, and simmer gently for 2-3 minutes to meld flavors and warm chicken. (3 minutes)
  8. Sprinkle chopped fresh basil over the top just before serving.
