  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 700 g), pounded slightly for even cooking
  • Salt and pepper, to taste
  • 2 tablespoons olive oil (extra virgin preferred)
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 1/3 cup chopped sun-dried tomatoes (packed in oil, drained)
  • 1/2 cup chicken broth (120 ml), homemade or low sodium store-bought
  • 3/4 cup heavy cream (180 ml)
  • 1/4 cup cottage cheese (60 g), blended smooth (optional but recommended)
  • 1/3 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning (or mix of dried basil, oregano, and thyme)
  • 1/4 teaspoon red pepper flakes (optional)
  • A handful fresh basil, chopped

Instructions

  1. Pat dry chicken breasts and season both sides generously with salt and pepper. Pound to an even thickness about 1/2 inch if needed. (5 minutes)
  2. Blend cottage cheese in a small blender or food processor until smooth and creamy. Set aside. (3 minutes)
  3. Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook without moving for 4-5 minutes until golden brown. Flip and cook another 4 minutes until internal temperature reaches 165°F (74°C). Remove chicken and tent with foil. (10 minutes)
  4. Reduce heat to medium and add butter to the skillet. When melted, stir in minced garlic and cook until fragrant, about 30 seconds. Add chopped sun-dried tomatoes and sauté for 1-2 minutes.
  5. Pour in chicken broth, scraping up browned bits. Simmer until reduced by half, about 3-4 minutes.
  6. Lower heat to medium-low. Stir in heavy cream, blended cottage cheese, Parmesan cheese, Italian seasoning, and red pepper flakes if using. Simmer gently, stirring frequently, until sauce thickens slightly, about 5 minutes. Adjust seasoning with salt and pepper.
  7. Return chicken breasts to the skillet, nestle into the sauce, spoon sauce over the top, and simmer for 2-3 minutes to warm through and blend flavors.
  8. Garnish with freshly chopped basil and extra Parmesan if desired. Serve hot with preferred sides.

If sauce is too thick, whisk in a splash of chicken broth or cream to loosen. Use a meat thermometer to avoid overcooking chicken. Blending cottage cheese smooths the sauce without heaviness. Chop sun-dried tomatoes finely for even flavor release. Simmer sauce gently to prevent curdling. For dairy-free, substitute heavy cream with coconut milk and omit Parmesan or use dairy-free cheese.
