  • 1/2 cup sun-dried tomatoes packed in oil, finely chopped
  • 3 cloves garlic, minced
  • 3/4 cup (180 ml) low sodium chicken broth
  • 3/4 cup (180 ml) heavy cream (can substitute with half-and-half for lighter sauce)
  • 1/3 cup grated Parmesan cheese
  • A handful fresh basil, chopped (optional but recommended)
  • Pinch of red pepper flakes (optional)

Instructions

  1. Place chicken breasts between two sheets of parchment or plastic wrap. Pound gently with a meat mallet or rolling pin to about 1/2-inch thickness. Season both sides generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering. Add chicken breasts and sear for 3-4 minutes per side until golden brown and cooked through. Remove chicken to a plate and cover loosely with foil to keep warm.
  3. Lower heat to medium. Add minced garlic and chopped sun-dried tomatoes to the skillet. Stir frequently until garlic is fragrant and tomatoes soften, about 2-3 minutes. Avoid burning the garlic.
  4. Pour in chicken broth, scraping up browned bits from the bottom of the pan. Let broth simmer and reduce slightly for about 2 minutes.
  5. Stir in heavy cream and grated Parmesan cheese. Let sauce simmer gently, stirring frequently until slightly thickened, about 4-5 minutes. Sauce should coat the back of a spoon.
  6. Nestle seared chicken breasts back into the pan. Spoon sauce over the top. Simmer on low heat for 1-2 minutes to let flavors marry. Avoid overcooking to keep chicken juicy.
  7. Remove from heat and sprinkle chopped fresh basil and a pinch of red pepper flakes on top. Serve immediately.
