  • 32 oz (900 g) full fat cream cheese, softened
  • 1 1/4 cups (250 g) granulated sugar
  • 4 large eggs, room temperature
  • 1 cup (240 ml) full-fat sour cream
  • 1/2 cup (120 ml) full-fat sour cream for topping
  • 2 tsp vanilla extract
  • 2 tbsp (15 g) all-purpose flour
  • 1 tsp lemon juice (optional)
  • 1 1/2 cups (150 g) crushed graham crackers
  • 6 tbsp (85 g) unsalted butter, melted
  • 1/4 tsp salt
  • 2 tbsp (25 g) sugar for topping
  • 1/2 tsp vanilla extract for topping

Instructions

  1. Preheat oven to 350°F (175°C). Mix crushed graham crackers, melted butter, and salt until crumbs clump together. Press firmly into bottom of 9-inch springform pan. Bake 10 minutes and cool.
  2. Beat softened cream cheese with electric mixer on medium speed until smooth, about 2-3 minutes. Scrape sides to prevent lumps.
  3. Gradually add granulated sugar and beat until silky, about 2 minutes.
  4. Add eggs one at a time on low speed, just until blended. Avoid overmixing.
  5. Mix in flour, vanilla extract, and optional lemon juice on low speed until just combined.
  6. Fold in 1 cup sour cream gently with spatula until evenly distributed.
  7. Pour batter over cooled crust and smooth top.
  8. Mix 1/2 cup sour cream with 2 tbsp sugar and 1/2 tsp vanilla extract for topping. Spread evenly over batter.
  9. Place springform pan in large roasting pan. Fill roasting pan with hot water halfway up sides of springform pan (water bath). Bake at 325°F (160°C) for 55-65 minutes until edges are set and center jiggles slightly.
  10. Turn off oven, leave cheesecake inside with door slightly open for 1 hour to cool gradually.
  11. Remove from oven and water bath. Refrigerate at least 6 hours or overnight before serving.
