A quick and easy no-cook breakfast made with rolled oats, peanut butter, banana, Greek yogurt, and protein powder. Perfect for busy mornings, this creamy overnight oats recipe tastes like dessert for breakfast and keeps you full for hours.

Ingredients

Scale
  • 1/2 cup (50g) rolled oats (old-fashioned)
  • 1/2 cup (120ml) milk of choice (whole milk, oat milk, or almond milk)
  • 1/4 cup (60g) plain Greek yogurt
  • 2 tablespoons (32g) creamy peanut butter (natural, no added sugar)
  • 1 medium ripe banana, divided (half mashed, half sliced)
  • 1 scoop (about 30g) protein powder (vanilla or unflavored)
  • 1 tablespoon (15ml) maple syrup or honey (optional)
  • 1 tablespoon (12g) chia seeds (optional)
  • 1 tiny pinch of salt

Instructions

  1. In a mason jar or small bowl, mash half the banana with a fork until mostly smooth with a few tiny chunks.
  2. Add the milk, Greek yogurt, and peanut butter to the mashed banana. Stir with a fork until the peanut butter is mostly incorporated.
  3. Add the rolled oats, protein powder, chia seeds (if using), and a tiny pinch of salt. Stir until everything is combined and no dry pockets remain.
  4. Drizzle in the maple syrup or honey if using. Taste and adjust sweetness as desired.
  5. Slice the remaining half banana and arrange the slices on top. Press them down gently so they are partially submerged.
  6. Screw the lid on tightly and refrigerate for at least 6 hours, preferably 8-12 hours or overnight.
  7. In the morning, stir the oats well. If too thick, add a splash of milk. Enjoy cold or microwave for 45-60 seconds if you prefer warm oats.

Notes

Mash the banana first for the creamiest texture. Different protein powders absorb liquid differently; adjust milk as needed. For a vegan version, use coconut yogurt and maple syrup. Oats keep in the fridge for up to 5 days. Do not freeze.
