Creamy Peach Burrata Summer Salad: Easy 10-Minute Recipe

This no-cook summer salad features sweet, juicy peaches, creamy burrata, peppery arugula, and a tangy balsamic glaze. Ready in just 10 minutes, it’s perfect for potlucks, backyard dinners, or lazy Sundays.

  • 34 ripe peaches, sliced into wedges
  • 8 ounces fresh burrata (2 balls)
  • 5 ounces fresh arugula
  • 1/4 cup fresh basil leaves, loosely packed
  • 34 tablespoons high-quality balsamic glaze
  • 2 tablespoons extra-virgin olive oil
  • Flaky sea salt (like Maldon) and freshly cracked black pepper, to taste
  • Optional: toasted pine nuts or sliced almonds, honey, red pepper flakes

Instructions

  1. Wash and dry the arugula thoroughly. Spread it evenly on a large serving platter.
  2. Wash and dry the peaches. Cut each in half along the natural seam, twist to separate, and remove the pit. Slice each half into wedges about 1/4-inch thick. Arrange the peach slices artfully over the arugula.
  3. Remove the burrata from its packaging and let it come to room temperature for about 10 minutes. Place the burrata balls on the salad, either whole or torn into large chunks.
  4. Stack the basil leaves, roll them loosely, and slice into thin ribbons (chiffonade) or tear into small pieces. Scatter the basil over the salad.
  5. Drizzle the olive oil evenly over the salad, then drizzle the balsamic glaze in a zigzag pattern. Sprinkle generously with flaky sea salt and a few cracks of black pepper. Taste and adjust seasoning if needed.
  6. Serve immediately within 15 minutes of assembly.

Notes

Choose ripe but firm peaches. Let burrata come to room temperature for best creaminess. Don’t overdress the salad; start with less balsamic glaze. Best served immediately. For grilled peach version, halve peaches, brush with olive oil, and grill cut-side down over medium-high heat for 2-3 minutes.
