A quick and easy recipe to make a creamy, lightly spiced pumpkin foam topping for iced coffee, perfect for cozy fall mornings and Halloween treats.

  • 1 cup (240 ml) cold whole milk (or 2% or oat milk for lighter/dairy-free option)
  • 2 tablespoons (30 ml) pumpkin puree (canned, not pumpkin pie filling)
  • 1 tablespoon (15 ml) maple syrup (can substitute honey or agave)
  • 1 teaspoon (5 ml) vanilla extract
  • 1 teaspoon (2 grams) pumpkin pie spice (or ½ teaspoon cinnamon plus pinch each of nutmeg and ginger)
  • Pinch of salt

Instructions

  1. In a mixing bowl or large cup, combine 1 cup cold milk, 2 tablespoons pumpkin puree, 1 tablespoon maple syrup, 1 teaspoon vanilla extract, 1 teaspoon pumpkin pie spice, and a pinch of salt.
  2. Stir the ingredients together until fully blended and pumpkin is evenly distributed without clumps, about 30 seconds.
  3. Using a milk frother, blend on high speed for 1 to 2 minutes until the foam is thick, creamy, and airy. If using a handheld mixer, whisk vigorously for 2 to 3 minutes. If shaking in a jar, shake hard for 3 to 4 minutes until soft peaks form with a glossy finish.
  4. Fill a glass with your favorite cold brew or iced coffee, leaving room for the foam on top.
  5. Spoon or gently pour the pumpkin spice cold foam over the iced coffee, allowing it to float and create a layered effect.
  6. Optionally, sprinkle a little extra pumpkin pie spice or cinnamon on top for garnish.

Notes

Use cold milk straight from the fridge for best foam. Avoid over-frothing to prevent watery foam. Freshly ground spices improve flavor. Store leftover foam in an airtight container in the fridge up to 24 hours and whisk before use. For dairy-free, use oat or almond milk and swap maple syrup with agave nectar.
