  • 2 cups (200g) sharp cheddar cheese, freshly shredded
  • 4 ounces (115g) cream cheese, softened
  • 1/2 cup (120ml) mayonnaise
  • 4 ounces (115g) jarred pimentos, drained and chopped
  • 1 tablespoon yellow mustard
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon garlic powder (optional)
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Shred 2 cups (200g) of sharp cheddar cheese finely. Drain and chop 4 ounces (115g) of jarred pimentos into small pieces.
  2. Soften 4 ounces (115g) of cream cheese to room temperature, about 30 minutes or microwave for 15 seconds without melting.
  3. In a mixing bowl, combine softened cream cheese and 1/2 cup (120ml) mayonnaise. Beat on medium speed until smooth and creamy, about 1-2 minutes.
  4. Stir in 1 tablespoon yellow mustard, 1 teaspoon Worcestershire sauce, and 1/2 teaspoon garlic powder (optional) until fully incorporated.
  5. Reduce mixer speed to low and gently fold in shredded cheddar and chopped pimentos until evenly distributed, avoiding overmixing.
  6. Season with salt and freshly ground black pepper gradually, tasting as you go.
  7. Cover and refrigerate the spread for at least 1 hour before serving to let flavors meld and texture set.

Notes

Use freshly shredded cheddar cheese for best texture and flavor. Soften cream cheese before mixing to avoid lumps. Avoid overmixing to maintain texture. Chill at least 1 hour before serving. For a smoother spread, pulse briefly in a food processor after folding in cheese and pimentos. Store in airtight container in refrigerator up to 5 days.
