  • ½ cup (120g) plain Greek yogurt
  • ¾ cup (180ml) milk (whole or plant-based)
  • 2 tbsp (30ml) honey
  • 1 tsp vanilla extract
  • 1 cup (150g) fresh strawberries, chopped
  • 4 sheets graham crackers, crushed
  • 1 tsp lemon zest (optional)

Instructions

  1. Soften the cream cheese by letting it sit at room temperature for 10-15 minutes.
  2. In a medium mixing bowl, whisk together the softened cream cheese and Greek yogurt until smooth and creamy.
  3. Stir in the milk, honey, and vanilla extract until well combined and pourable but thick.
  4. Gently fold in the rolled oats and chopped strawberries. Add lemon zest if using.
  5. Divide the mixture evenly into two glass jars or airtight containers, seal, and refrigerate overnight or for at least 6 hours.
  6. Just before serving, crush the graham crackers finely and sprinkle the crumble generously over the oats.
  7. Give the oats a gentle stir to mix the topping slightly and enjoy cold or let sit for 5 minutes if preferred less chilled.

Notes

Soften cream cheese before mixing to avoid lumps. Crush graham crackers just before serving to keep them crunchy. Add a splash of milk in the morning if mixture is too thick. Use rolled oats for best texture. Frozen berries can substitute fresh strawberries if thawed and drained. For vegan version, use dairy-free cream cheese, yogurt, and plant-based milk with maple syrup instead of honey.
