  • 1/2 cup small-curd cottage cheese, blended until smooth
  • 4 cups broccoli florets, finely chopped
  • 8 ounces sharp cheddar cheese, freshly grated

  • Pinch of nutmeg (optional)

Instructions

  1. Sauté the Aromatics: In a large pot, melt the butter over medium heat. Add the diced onion and carrots. Cook, stirring occasionally, until the onion is translucent and the carrots begin to soften, about 4-5 minutes. Add the minced garlic and cook for another 30 seconds until fragrant.
