Instructions

  1. Preheat air fryer to 400°F (200°C).
  2. Cut sweet potatoes into uniform wedges. Toss with 1 tablespoon olive oil, ground cumin, chili powder (if using), salt, and pepper. Set aside.
  3. Pat pork chops dry with paper towels. Drizzle with 1 tablespoon olive oil and rub to coat evenly.
  4. Mix garlic powder, smoked paprika, salt, and black pepper in a small bowl. Sprinkle seasoning blend over both sides of pork chops, pressing lightly to adhere.
  5. Place sweet potato wedges in air fryer basket in a single layer. Air fry for 10 minutes at 400°F, shaking basket halfway through.
  6. After 10 minutes, push wedges to one side or remove if basket is small. Place pork chops in basket and cook both for 8 minutes.
  7. Flip pork chops, brush top side with about 1 tablespoon BBQ sauce, and cook for 7-8 more minutes.
  8. Flip pork chops again, brush other side with remaining BBQ sauce, and cook for a final 2-3 minutes until internal temperature reaches 145°F (63°C).
  9. Use a meat thermometer to check doneness. Transfer pork chops and sweet potato wedges to a plate and let rest for 5 minutes.
  10. Serve pork chops alongside sweet potato wedges with extra BBQ sauce on the side and garnish with fresh parsley or chopped green onions if desired.
