  • 34 cloves fresh garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped
  • 2 tablespoons olive oil (extra virgin recommended)
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon lemon zest (optional)

Instructions

  1. Pat the chicken thighs dry with paper towels and let them sit for 10 minutes to come closer to room temperature.
  2. In a bowl, combine minced garlic, chopped rosemary, thyme, parsley, paprika, salt, pepper, and lemon zest if using. Mix with olive oil until it forms a paste-like consistency.
  3. Rub the seasoning mix all over the chicken thighs, making sure to get under the skin where possible without tearing it.
  4. Preheat the air fryer to 400°F (200°C) and let it run empty for 5 minutes.
  5. Place the thighs skin side down in the air fryer basket. Cook for 12 minutes, then flip and cook another 10-12 minutes skin side up, until the skin is golden and crisp and internal temperature reaches 165°F (74°C).
  6. Let the chicken rest for 5 minutes before serving to allow juices to redistribute.

Patting the chicken dry is key for crispy skin. Massage seasoning under the skin for better flavor. Avoid overcrowding the air fryer basket to prevent steaming. Use a meat thermometer to ensure the chicken reaches 165°F (74°C). Rest chicken before serving. If skin isn’t crispy enough, air fry for a few more minutes at 400°F (200°C).
