This recipe delivers crispy air fryer chicken wings coated in a bold, flavorful buffalo sauce, perfect for quick weeknight meals or game day gatherings. The wings have crackly skin and a tangy, buttery heat that satisfies every bite.

Ingredients

Scale
  • 2 pounds fresh or thawed chicken wings, tips removed and sections separated
  • 1 tablespoon baking powder (aluminum-free preferred)
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • 1 teaspoon garlic powder
  • 4 tablespoons unsalted butter, melted
  • ½ cup hot sauce (classic Frank’s RedHot recommended)
  • 1 teaspoon apple cider vinegar
  • Optional: pinch of smoked paprika or cayenne pepper

Instructions

  1. Pat the chicken wings dry with paper towels to ensure crispiness.
  2. In a large bowl, toss wings with baking powder, salt, pepper, and garlic powder until evenly coated.
  3. Preheat the air fryer to 400°F (200°C) for 5 minutes.
  4. Arrange the wings in a single layer in the air fryer basket without overcrowding.
  5. Cook at 400°F for 10 minutes, then flip the wings using tongs.
  6. Continue cooking for another 10-15 minutes until wings are golden and crisp and reach an internal temperature of 165°F (74°C). Add 3-5 more minutes if extra crispiness is desired, watching carefully to avoid burning.
  7. While wings cook, melt butter in a small bowl and stir in hot sauce, garlic powder, and apple cider vinegar. Adjust heat or tanginess to taste.
  8. Once wings are done, transfer them immediately to a clean bowl and toss with the buffalo sauce until fully coated.
  9. Serve hot with celery sticks and blue cheese or ranch dressing if desired.

Notes

Pat wings dry thoroughly before seasoning for best crispiness. Use baking powder, not baking soda, to avoid metallic taste. Flip wings halfway through cooking for even browning. Adjust cooking time based on wing size. Melt butter gently to prevent sauce separation. For dairy-free buffalo sauce, substitute butter with vegan margarine or coconut oil. If no air fryer is available, bake wings on a wire rack at 425°F for 40-45 minutes, flipping halfway. Reserve some sauce to drizzle on wings before serving if extra saucy wings are desired.
