Ingredients

Scale
  • 2 pounds chicken wings, separated into drumettes and flats
  • 1 tablespoon baking powder (not baking soda)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • Honey Garlic Glaze:
  • 1/4 cup honey
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce (low sodium if preferred)
  • 1 teaspoon apple cider vinegar
  • Pinch of red pepper flakes (optional)
  • Buffalo Glaze:
  • 1/4 cup hot sauce (Frank’s RedHot recommended)
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Barbecue Glaze:
  • 1/3 cup barbecue sauce
  • 1 tablespoon honey
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon smoked paprika

Instructions

  1. Rinse and pat dry the chicken wings thoroughly with paper towels.
  2. In a large bowl, toss wings with baking powder, salt, and pepper until evenly coated.
  3. Preheat the air fryer to 400°F (200°C).
  4. Arrange wings in a single layer in the air fryer basket; cook for 12 minutes.
  5. Flip each wing and cook another 12-13 minutes until skin is golden and crispy.
  6. While wings cook, prepare the glazes in separate bowls:
  7. Honey garlic glaze: whisk honey, garlic, soy sauce, apple cider vinegar, and red pepper flakes.
  8. Buffalo glaze: mix hot sauce, melted butter, garlic powder, and smoked paprika.
  9. Barbecue glaze: combine barbecue sauce, honey, Worcestershire sauce, and smoked paprika.
  10. Warm honey garlic glaze gently if desired.
  11. Divide cooked wings into three portions and toss each in a different glaze until well coated.
  12. Optional: Return glazed wings to air fryer at 390°F (200°C) for 2-3 minutes for extra stickiness.
  13. Serve wings warm with celery or carrot sticks and your choice of dip.

Notes

Dry wings thoroughly before seasoning to ensure crispiness. Use baking powder (not baking soda) to raise skin pH and crisp better. Avoid overcrowding the air fryer basket for even cooking. For extra sticky wings, briefly reheat glazed wings in the air fryer. Leftovers reheat well in the air fryer to maintain crispness. Substitute tamari for soy sauce for gluten-free option and plant-based butter for dairy-free buffalo glaze.
