  • 2 tablespoons apple cider vinegar

  • Roasted Vegetables:
  • 2 cups baby carrots
  • 1 cup Brussels sprouts, halved
  • 1 red bell pepper, cut into strips
  • 1 small red onion, sliced
  • Salt and pepper to taste
  • Optional garnish: chopped parsley or thyme

Instructions

  1. Pat pork chops dry with paper towels. Season both sides generously with salt, pepper, garlic powder, and smoked paprika. Let rest at room temperature for 10 minutes.
  2. In a bowl, toss baby carrots, halved Brussels sprouts, red bell pepper strips, and sliced red onion with olive oil, salt, and pepper until evenly coated.
  3. Preheat the air fryer to 400°F (200°C) and run empty for 5 minutes.
  4. Place the vegetables in the air fryer basket in a single layer and air fry for 15 minutes, shaking or tossing halfway through.
  5. Brush pork chops lightly with olive oil. Place in the air fryer basket and cook at 400°F (200°C) for 12-15 minutes, flipping halfway through. Use a meat thermometer to ensure internal temperature reaches 145°F (63°C).
  6. While pork cooks, combine apple cider, apple cider vinegar, brown sugar or maple syrup, Dijon mustard, and cinnamon in a small saucepan. Simmer over medium heat, stirring occasionally, until reduced by half and syrupy (about 10-12 minutes).
  7. Brush the cooked pork chops generously with the apple cider glaze on both sides. Return to the air fryer for 1-2 minutes to set the glaze slightly, or serve immediately.
  8. Plate the pork chops alongside the roasted vegetables and garnish with fresh herbs if desired.

Pat pork chops dry before seasoning to ensure crispiness. Let seasoned chops rest before cooking to enhance flavor and texture. Flip pork chops only once halfway through cooking.
