Ingredients

Scale
  • 2 bone-in pork chops, about 1-inch thick
  • ½ cup all-purpose flour
  • ½ cup panko breadcrumbs
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper (optional)
  • Olive oil spray
  • 3 tablespoons unsalted butter, softened
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon fresh thyme leaves
  • ¼ teaspoon salt

Instructions

  1. Make the garlic herb butter first. In a small bowl, combine the softened butter, minced garlic, chopped parsley, thyme leaves, and salt. Mash it together with a fork until everything is evenly distributed. Set it aside at room temperature.
  2. Pat the pork chops dry with paper towels. Season both sides generously with salt and pepper.
  3. Set up your breading station. In the first shallow bowl, combine the flour, garlic powder, smoked paprika, and cayenne. In the second bowl, beat the egg with a tablespoon of water. In the third bowl, spread out the panko breadcrumbs.
  4. Bread the pork chops. Working with one chop at a time, dredge it in the seasoned flour, shaking off any excess. Dip it into the egg wash, letting the excess drip off. Finally, press it into the panko breadcrumbs, making sure both sides are fully coated.
  5. Preheat your air fryer to 400°F and let it run for 3-5 minutes.
  6. Lightly mist the air fryer basket with olive oil. Place the breaded pork chops in a single layer without touching.
  7. Spray the tops of the chops with a light mist of oil.
  8. Cook for 10-12 minutes, flipping halfway through at the 5-6 minute mark. The internal temperature should reach 145°F.
  9. Transfer the chops to a cutting board and let them rest for 5 minutes.
  10. While the chops are still hot, place a generous dollop of the garlic herb butter on top of each one. Let it melt naturally.
  11. Serve immediately.

Notes

Don’t skip drying the pork chops or preheating the air fryer. Use a meat thermometer to ensure 145°F internal temperature. Let the chops rest for 5 minutes before serving. The garlic herb butter can be made up to a week ahead.
