These buttery, flaky, savory little pockets of joy are shaped like footballs and perfect for game day. Made with simple ingredients, they come together in about 35 minutes and are a guaranteed crowd-pleaser.

  • 1 lb ground sausage (mild Italian or breakfast sausage)
  • 1/4 cup panko breadcrumbs
  • 1 large egg, beaten (for filling)
  • 1 large egg, beaten (for egg wash)
  • 1 tsp dried parsley
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Sesame seeds for topping (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Place a wire rack inside your baking sheet and line the rack with parchment paper.
  2. In a medium bowl, combine the ground sausage, panko breadcrumbs, beaten egg, dried herbs, and a pinch of black pepper. Mix with your hands until evenly incorporated. Do not overmix.
  3. On a lightly floured surface, unfold the thawed puff pastry sheet. Roll it out slightly to smooth the creases. Cut the sheet into 6 equal rectangles, about 3 inches by 4 inches each.
  4. Take one rectangle of pastry. Place about 2 tablespoons of the sausage mixture in the center. Shape the filling into a small log, leaving about 1/2 inch of space at each end. Fold the pastry over the filling lengthwise, bringing the long edges together. Pinch the seam to seal, then crimp with a fork. Taper the ends slightly by pinching them closed and curving them inward to form a football shape.
  5. Place each shaped roll on the prepared wire rack, seam side down. Brush the tops with beaten egg wash. Using a sharp knife, make 3 small diagonal slashes on the top of each roll. Sprinkle with sesame seeds if using.
  6. Bake for 18-22 minutes, until the pastry is deep golden brown and puffed. The internal temperature of the sausage should reach 160°F (71°C).
  7. Let them rest on the wire rack for 5 minutes before serving.

Notes

For crispy bottoms, bake on a wire rack set inside the baking sheet. Cold pastry holds its shape better; if it gets sticky, refrigerate for 10 minutes. Seal edges firmly to prevent bursting. Start checking at 18 minutes to avoid burning.
