Crispy Buffalo Cauliflower Bites: Best Game Day Snack

These crispy, spicy buffalo cauliflower bites are shaped like footballs for a fun game day snack. They’re baked, not fried, and deliver all the flavor of buffalo wings without the mess.

  • 1 large head of cauliflower (about 22.5 pounds)
  • 1 cup all-purpose flour
  • 1 cup milk (dairy or unsweetened almond milk)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup panko breadcrumbs
  • 1/2 cup buffalo wing sauce
  • 2 tablespoons melted butter (or vegan butter)
  • Optional for serving: ranch or blue cheese dressing, celery sticks, carrot sticks

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and place a wire rack on top. Lightly spray the rack with non-stick cooking spray.
  2. Remove the leaves and trim the stem of the cauliflower so it sits flat. Cut the head into even slabs about 1/2-inch thick. You should get 4-5 slabs from a large head.
  3. Press a football-shaped cookie cutter firmly into each cauliflower slab to cut out shapes. Repeat with remaining slabs and large scraps to get about 20-24 footballs.
  4. In a shallow bowl, whisk together the all-purpose flour, milk, garlic powder, onion powder, smoked paprika, salt, and black pepper until smooth (consistency of thin pancake batter).
  5. Place the panko breadcrumbs in another shallow bowl.
  6. Using tongs, dip a cauliflower football into the batter, letting excess drip off. Then place it in the panko and press gently to coat all sides. Place on the prepared wire rack. Repeat with all pieces.
  7. Bake for 15 minutes. Carefully flip each football using tongs, then bake for another 10-15 minutes until deeply golden brown and crispy.
  8. While the cauliflower bakes, whisk together the buffalo wing sauce and melted butter in a small bowl.
  9. Let the baked footballs cool on the rack for 2 minutes. Transfer to a large bowl, pour the buffalo sauce over them, and gently toss with a spatula until evenly coated. Serve immediately with ranch or blue cheese dressing on the side.

Notes

For best results, use a wire rack to ensure all-over crispiness. Do not overcrowd the pan. Toss the baked footballs in sauce right before serving to maintain crunch. Leftovers can be stored in an airtight container in the refrigerator for up to 2 days; reheat in the oven or air fryer at 350°F for 5-7 minutes.
