A quick and easy crispy chicken Caesar salad featuring pan-fried chicken breasts and homemade Parmesan crisps for a fresh, crunchy twist on a classic favorite.

  • 2 large boneless, skinless chicken breasts (about 1 pound / 450g), pounded to even thickness
  • Salt and freshly ground black pepper (to taste)
  • 1 teaspoon garlic powder
  • 2 tablespoons olive oil or avocado oil
  • 1 cup finely grated Parmesan cheese (about 100g)
  • Freshly cracked black pepper (optional)
  • 1 large head of romaine lettuce, chopped (about 6 cups)
  • 1/2 cup Caesar dressing (homemade or store-bought)
  • Fresh lemon wedges (optional)
  • For homemade dressing (optional):
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 small garlic clove, minced
  • 2 tablespoons freshly grated Parmesan cheese
  • 1 tablespoon lemon juice
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste

Instructions

  1. Pat chicken breasts dry with paper towels, then season generously with salt, pepper, and garlic powder on both sides. Let rest for 5 minutes.
  2. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  3. Spoon tablespoon-sized mounds of grated Parmesan onto the sheet, spacing about 2 inches apart. Flatten slightly with the back of a spoon. Optionally sprinkle with cracked black pepper.
  4. Bake Parmesan crisps for 5-7 minutes until golden and bubbly. Remove and cool completely on the sheet before transferring to a plate.
  5. Heat olive oil in a large skillet over medium-high heat until shimmering.
  6. Add chicken breasts and cook undisturbed for 5-6 minutes until golden-brown and crisp on one side.
  7. Flip chicken and cook another 4-5 minutes until cooked through (internal temperature 165°F / 74°C). Remove from pan and let rest 5 minutes before slicing thinly.
  8. In a large bowl, toss chopped romaine with Caesar dressing until evenly coated but not soggy. Adjust dressing to taste.
  9. Arrange dressed lettuce on serving plates. Top with sliced crispy chicken and scatter Parmesan crisps over the top.
  10. Serve with lemon wedges on the side for a fresh squeeze if desired.

Notes

Pat chicken dry before cooking to ensure crispiness. Do not move chicken too soon while cooking to form a crust. Use finely grated Parmesan for crisps and watch carefully to avoid burning. Let chicken rest after cooking to redistribute juices. Parmesan crisps can be made ahead and stored in an airtight container for up to 2 days but will lose some crunch.
