Ingredients

Scale
  • 2 pounds (900 g) chicken wings, whole or separated into flats and drumettes
  • 1 tablespoon baking powder (not baking soda)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup (120 ml) BBQ sauce (e.g., Sweet Baby Ray’s)
  • 3 tablespoons honey
  • 3 cloves garlic, minced or pressed
  • 1 tablespoon soy sauce
  • 1 teaspoon apple cider vinegar
  • 1/4 teaspoon smoked paprika (optional)
  • 1/2 cup (120 ml) sour cream
  • 1/4 cup (60 ml) mayonnaise
  • 1 teaspoon dried dill
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 tablespoon fresh chopped chives or green onions
  • Salt and pepper to taste
  • Optional: A squeeze of fresh lemon juice

Instructions

  1. Preheat your oven to 425°F (220°C). Place a wire rack on a rimmed baking sheet.
  2. Dry the chicken wings thoroughly with paper towels to remove moisture.
  3. Mix baking powder, kosher salt, and black pepper in a large bowl. Add wings and toss to coat evenly.
  4. Arrange wings in a single layer on the wire rack, spaced out for air circulation.
  5. Bake for 35-40 minutes, flipping halfway through, until golden brown and crispy. Optionally broil for 2-3 minutes to crisp further, watching closely.
  6. While wings bake, prepare the honey garlic BBQ sauce: In a small saucepan over medium heat, combine BBQ sauce, honey, minced garlic, soy sauce, apple cider vinegar, and smoked paprika. Simmer gently for 5 minutes until fragrant and slightly thickened. Remove from heat.
  7. Mix the creamy ranch dip: In a bowl, combine sour cream, mayonnaise, dried dill, garlic powder, onion powder, chives, salt, and pepper. Add lemon juice if desired. Chill until serving.
  8. Once wings are out of the oven, toss immediately in the warm honey garlic BBQ sauce to coat evenly.
  9. Serve wings hot with the creamy ranch dip on the side.

Notes

Use baking powder, not baking soda, to achieve crispy skin without bitterness. Pat wings dry before seasoning to remove moisture. Avoid overcrowding the baking pan to ensure even crisping. Simmer the sauce gently to prevent honey crystallization. Serve wings immediately after tossing in sauce to maintain crispiness. Sauce and dip can be prepared ahead of time. Reheat wings in oven to restore crispiness; avoid microwaving.
