  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • Salt and pepper, to taste
  • 1 tsp onion powder (optional)
  • 1 tsp garlic powder (optional)
  • 1 bag (about 32 oz) frozen tater tots
  • ½ cup shredded cheddar cheese (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Brown the ground beef in a large skillet over medium-high heat until no longer pink, about 6-8 minutes. Drain excess fat.
  3. Add chopped onion and minced garlic to the skillet with the beef and cook until onion is translucent, about 3-4 minutes.
  4. In a mixing bowl, combine cream of mushroom soup, sour cream, shredded cheddar cheese, frozen mixed vegetables, onion powder, garlic powder, salt, and pepper. Stir until smooth.
  5. Add the sautéed beef mixture to the bowl and fold everything together until well combined.
  6. Spread the beef and creamy mixture evenly in a 9×13 inch casserole dish.
  7. Arrange frozen tater tots in a single layer over the filling without thawing.
  8. Sprinkle the remaining shredded cheddar cheese evenly on top of the tater tots.
  9. Bake for 40-45 minutes, or until tater tots are golden brown and crispy and the filling is bubbly around the edges.
  10. Let the casserole rest for about 5 minutes before serving.

Notes

Keep tater tots frozen until just before baking to ensure crispiness. Drain excess fat from beef to avoid greasiness. You can prepare the beef mixture a day ahead and refrigerate. For gluten-free, use labeled gluten-free soup and tater tots. Optional additions include Worcestershire sauce, smoked paprika, hot sauce, or different cheese varieties. To prevent over-browning, tent with foil halfway through baking if needed.
