Crispy Roasted Radishes with Herb Butter

A simple and delicious side dish featuring radishes roasted to crispy perfection and tossed in a flavorful herb butter made with fresh parsley, thyme, and garlic.

  • 1 pound (450g) red globe radishes
  • 3 tablespoons unsalted butter, softened
  • 1 tablespoon fresh parsley, finely chopped
  • 1 tablespoon fresh thyme, finely chopped
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 teaspoon lemon juice (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse 1 pound (450g) of radishes well, trim the tops and tails, and slice them in half. Quarter larger radishes for even cooking.
  3. Place the radishes in a mixing bowl, drizzle with 1 tablespoon olive oil, and sprinkle with salt and black pepper. Toss until well-coated.
  4. Line a baking sheet with parchment paper or a silicone mat and spread the radishes cut side down in a single layer, leaving space between them.
  5. Roast for about 20 minutes, flipping the radishes halfway through with tongs or a spatula, until golden-brown and crispy on the outside and tender inside.
  6. While the radishes roast, mix 3 tablespoons softened unsalted butter with 1 tablespoon each of minced parsley and thyme, plus 1 clove garlic, minced. Add a pinch of salt and a squeeze of lemon juice if desired.
  7. Once roasted, transfer the radishes to a serving bowl and immediately toss with the herb butter so it melts and coats them evenly.
  8. Serve warm, garnished with extra fresh herbs if desired.

Notes

Do not overcrowd the pan to avoid steaming the radishes. Flip radishes halfway through roasting for even crisping. If herb butter is too cold, soften it in the microwave for 10 seconds before tossing. For extra crunch, broil for 1-2 minutes at the end but watch carefully to avoid burning. Pat radishes dry before oiling to ensure crispiness.
