  • 6 cups (150 g) cartoon cereal (fruity, colorful with mix of shapes and textures, e.g., Lucky Charms or Froot Loops)
  • 3 tablespoons (42 g) unsalted butter, softened
  • 4 cups (160 g) mini marshmallows
  • 1 teaspoon vanilla extract
  • Optional add-ins: pinch of salt, sprinkles or edible glitter, chocolate chips or drizzle

Instructions

  1. Lightly grease a 9×13-inch pan or line it with parchment paper. Measure and have cereal ready.
  2. In a large saucepan over medium heat, melt 3 tablespoons (42 g) of unsalted butter, about 2-3 minutes. Avoid browning.
  3. Add 4 cups (160 g) mini marshmallows to the melted butter. Stir continuously with a wooden spoon or silicone spatula until completely melted and smooth, about 4-5 minutes. Stir in 1 teaspoon vanilla extract.
  4. Remove pan from heat. Immediately add 6 cups (150 g) cartoon cereal. Gently fold cereal into marshmallow mixture quickly (1-2 minutes) to coat without crushing.
  5. Pour mixture into prepared pan. Using wax paper or a lightly greased spatula, press mixture down firmly but gently to create an even layer without crushing cereal.
  6. Let treats cool at room temperature for 30 minutes to 1 hour until firm. Alternatively, chill in fridge for 15-20 minutes to speed setting.
  7. Once set, cut into squares or fun shapes using a sharp knife or bench scraper. Serve immediately or store.

Notes

Use mini marshmallows for best melting. Melt butter and marshmallows slowly over medium heat to avoid burning. Fold cereal gently and quickly to keep treats crispy. Press mixture gently to avoid dense treats. Warm knife under hot water for clean cuts. Store in airtight container at room temperature up to 3 days or freeze wrapped individually.
