Crispy Sleepover S’mores Nachos with Gooey Marshmallows

A quick and easy dessert combining crispy graham crackers, melting chocolate chunks, and toasted mini marshmallows for a nostalgic and comforting treat perfect for sleepovers and gatherings.

  • Graham crackers, broken into bite-sized pieces (preferably honey-flavored)
  • 1 cup (170 g) chocolate chunks or chips (dark or milk chocolate, Ghirardelli 60% bittersweet recommended)
  • 1 ½ cups (about 120 g) mini marshmallows
  • 2 tablespoons (28 g) butter, melted
  • 1 tablespoon (12 g) brown sugar (optional)
  • ½ teaspoon (2.5 ml) vanilla extract (optional)
  • Pinch of sea salt flakes (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking sheet with parchment paper or a silicone mat for easy cleanup.
  2. Break graham crackers into bite-sized pieces, mixing small squares and larger chunks. Place them in a large mixing bowl.
  3. Melt the butter in the microwave or on the stovetop. Pour over the graham crackers along with the brown sugar and vanilla extract, if using. Toss gently to coat evenly.
  4. Spread the coated graham crackers evenly on the prepared baking sheet in a single layer. Bake for 8-10 minutes until lightly golden and crisp.
  5. Remove the baking sheet from the oven. Sprinkle the chocolate chunks evenly over the hot crackers so they start melting.
  6. Scatter mini marshmallows generously on top.
  7. Return the baking sheet to the oven. Bake for another 5-7 minutes, watching closely until marshmallows are golden brown and puffed.
  8. Optional: Sprinkle a pinch of sea salt flakes over the top immediately after removing from the oven.
  9. Let cool for 2-3 minutes to allow chocolate to set slightly while keeping marshmallows gooey.
  10. Serve immediately using a spatula to scoop clusters or share straight from the sheet.

Notes

Use mini marshmallows for even toasting and melting. Watch marshmallows closely during baking to avoid burning. For gluten-free, use gluten-free graham crackers or rice crackers. For dairy-free, use vegan butter and dairy-free chocolate chips. Fresh berries or a sprinkle of sea salt flakes add nice flavor contrasts. If marshmallows brown too fast, lower oven rack or reduce temperature. Stir coated crackers gently before baking for even crispness. Can be made on stovetop using a skillet on low heat with a lid.
