Instructions

  1. Grate 2 cups (about 200g) of sharp cheddar cheese finely and set aside.
  2. In a medium saucepan over medium heat, melt 3 tablespoons (42g) of unsalted butter.
  3. Whisk in 3 tablespoons (24g) of all-purpose flour continuously for 1-2 minutes until golden and nutty smelling.
  4. Slowly pour in 2 cups (480ml) of whole milk while whisking constantly to prevent lumps.
  5. Keep whisking as the mixture thickens, about 3-5 minutes, until smooth and creamy.
  6. Stir in 1 teaspoon garlic powder, 1 teaspoon onion powder, 1/2 teaspoon smoked paprika, and a pinch of cayenne pepper if using. Add salt and black pepper to taste.
  7. Remove saucepan from heat and gradually stir in shredded cheddar cheese until melted and velvety. Thin with a splash of milk if too thick or cook gently longer if too thin.
  8. Spread a generous layer of tortilla chips on a serving platter or oven-safe dish.
