A quick and healthy baked salmon recipe with lemon and herbs served over fluffy rice, perfect for busy weeknights and wholesome meals.

  • 4 salmon fillets (6 ounces each)
  • 1 large lemon (juiced and zested)
  • 2 tablespoons mixed fresh herbs (parsley, dill, thyme), chopped
  • 2 tablespoons extra virgin olive oil
  • 2 cups cooked jasmine or basmati rice (about 1/2 cup uncooked)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cook 1/2 cup uncooked jasmine or basmati rice according to package instructions (about 15 minutes). Set aside and keep warm.
  3. In a mixing bowl, combine the juice and zest of 1 large lemon, 2 tablespoons olive oil, and 2 tablespoons chopped fresh herbs. Stir to blend.
  4. Pat dry 4 salmon fillets, then gently toss them in the marinade until evenly coated. Let rest for 5 minutes.
  5. Place the fillets skin-side down on a parchment-lined baking sheet.
  6. Bake in the preheated oven for 12-15 minutes, checking at 12 minutes for doneness. The salmon should flake easily and remain moist.
  7. Spoon cooked rice into bowls and top each with a salmon fillet.
  8. Garnish with additional fresh herbs or a drizzle of olive oil if desired. Serve immediately while warm.

Notes

Do not overbake the salmon to keep it moist and flaky. Use fresh lemon zest for best flavor. Keep the skin on the salmon to lock in moisture. Rest salmon a few minutes after baking to redistribute juices. Adding a pinch of sea salt and freshly cracked black pepper before baking enhances flavor. For a stovetop option, pan-sear skin-side down for 4 minutes, then flip and cook 3-4 minutes on low heat.
