  • 1/2 cup (125g) natural peanut butter
  • 1/3 cup (113g) honey
  • 2 tablespoons chia seeds
  • 1/3 cup (60g) mini dark chocolate chips

Instructions

  1. Gather and measure your ingredients: 1 1/2 cups rolled oats, 1/2 cup natural peanut butter, 1/3 cup honey, 2 tablespoons chia seeds, and 1/3 cup mini dark chocolate chips.
  2. In a mixing bowl, combine peanut butter and honey. Stir until smooth and creamy, about 1-2 minutes.
  3. Add oats and chia seeds. Stir gently until evenly coated and mixture is slightly sticky but malleable.
  4. Fold in the mini dark chocolate chips carefully to distribute evenly without melting.
  5. Use a tablespoon or your hands to scoop and roll the mixture into 1-inch balls. Place on a parchment-lined baking sheet.
  6. Chill the bites in the refrigerator for at least 30 minutes to firm up.
  7. Store in an airtight container in the fridge for up to one week or freeze for up to three months.

Notes

Use room temperature peanut butter for easier mixing. If mixture is too dry, add a teaspoon of water or more honey; if too sticky, add more oats. Chill mixture before rolling if sticky. Mini chocolate chips prevent large chunks. For nut-free version, substitute peanut butter with sunflower seed butter and chia seeds with ground flaxseeds.
