Easy Apple Cider Mimosa with Cinnamon Sugar Rim

A simple, three-ingredient fall cocktail combining tart apple cider, crisp prosecco, and a warm cinnamon sugar rim. Perfect for brunch, Thanksgiving mornings, or any cozy gathering.

Ingredients

  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • Apple cider (chilled)
  • Prosecco or dry sparkling wine (chilled)
  • Apple or lemon wedge (for rimming)

Instructions

  1. In a small shallow dish, mix together 2 tablespoons granulated sugar and 1 teaspoon ground cinnamon until evenly combined.
  2. Run an apple or lemon wedge around the rim of a champagne flute to moisten it. Wipe any excess juice from inside the glass.
  3. Turn the glass upside down and press the moistened rim into the cinnamon sugar mixture, rotating gently for even coverage. Lift straight up and tap off excess.
  4. Let the rim set for about 30 seconds.
  5. Fill the glass about one-third full with cold apple cider (about 2-3 ounces).
  6. Slowly top with prosecco, pouring over the back of a spoon held just above the cider to preserve bubbles. Fill to about an inch from the rim.
  7. Gently stir once or twice with a long spoon or chopstick.
  8. Serve immediately.

Notes

Chill all ingredients thoroughly before assembling. Let the rim set for 30 seconds to prevent the sugar from sliding off. Use a dry sparkling wine to avoid a cloyingly sweet drink. For a non-alcoholic version, replace prosecco with sparkling apple cider or ginger ale.
