Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan with butter or nonstick spray; optionally line with parchment paper.
  2. Peel, core, and chop apples into ½-inch cubes. Set aside.
  3. In a large bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  4. In another large bowl, beat softened butter with granulated sugar and brown sugar until light and fluffy, about 3 minutes.
  5. Add eggs one at a time, mixing well after each. Stir in vanilla extract.
  6. Add flour mixture in three parts, alternating with buttermilk, starting and ending with flour. Mix just until combined; do not overmix.
  7. Gently fold in chopped apples and walnuts (if using) until evenly distributed.
  8. Pour batter into prepared pan and spread evenly. Bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  9. Cool cake in pan on a cooling rack for 10 minutes.
  10. While cake cools, make caramel glaze: In a small saucepan over medium heat, melt ½ cup butter. Add 1 cup brown sugar and ¼ cup heavy cream, stirring constantly. Bring to a gentle boil and let bubble for 1-2 minutes. Remove from heat and stir in 1 teaspoon vanilla and a pinch of salt.
  11. Pour warm caramel glaze over slightly cooled cake, spreading evenly. Let set for at least 15 minutes before slicing.

For best results, use room temperature ingredients. Do not overmix the batter. Cut apples into uniform ½-inch cubes. Start checking for doneness at 35 minutes. Let glaze cool slightly before pouring. The cake tastes even better on day two.
