  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon cinnamon (optional)
  • 1 cup fresh blueberries (about 150g)
  • Zest from 1 medium lemon
  • 2 cups milk (480ml; whole milk preferred, almond or oat milk for dairy-free)
  • 2 large eggs, room temperature
  • ¼ cup maple syrup or honey (60ml)
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter, melted (use vegan butter for dairy-free)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×9-inch baking dish with butter or non-stick spray.
  2. In a large bowl, mix rolled oats, baking powder, salt, and cinnamon (if using) until evenly combined.
  3. Gently fold in fresh blueberries and lemon zest, being careful not to crush the berries.
  4. In a separate bowl, whisk together milk, eggs, maple syrup or honey, vanilla extract, and melted butter until fully blended and slightly frothy.
  5. Pour the wet mixture over the dry ingredients and stir gently but thoroughly to coat the oats without crushing the berries.
  6. Transfer the mixture to the prepared baking dish, smoothing the top with a spatula and gently shaking to settle evenly.
  7. Bake for 35-40 minutes until the top is golden and set, and a toothpick inserted near the center comes out mostly clean.
  8. Let the baked oatmeal cool for 10 minutes before slicing and serving.

Notes

Use rolled oats for best texture; avoid instant or steel-cut oats. Room temperature eggs and milk blend better. Fold blueberries gently to keep them whole. Tent with foil if browning too fast. Adjust sweetness to taste. Variations include swapping fruits or adding nuts. For dairy-free, use plant-based milk and vegan butter. Can prepare mixture the night before and bake fresh in the morning.
