Soft, cakey baked donuts with a perfect cinnamon-sugar coating that come together in under 30 minutes. No yeast, no deep-frying, just simple ingredients and a donut pan for a fall treat that tastes like autumn in every bite.

  • ¾ cup granulated sugar
  • ½ cup pumpkin puree (not pumpkin pie filling)
  • 4 tablespoons melted butter (for donuts)
  • 1 large egg, room temperature
  • ½ cup milk (whole milk preferred)
  • 1 teaspoon vanilla extract
  • 1 ½ teaspoons baking powder
  • 2 teaspoons pumpkin pie spice
  • ½ teaspoon salt
  • 4 tablespoons melted butter (for coating)
  • ½ cup granulated sugar (for coating)
  • 2 tablespoons ground cinnamon (for coating)

Instructions

  1. Preheat oven to 350°F (175°C). Spray a 6-cavity donut pan generously with non-stick cooking spray.
  2. In a large bowl, whisk together flour, baking powder, pumpkin pie spice, and salt until evenly distributed.
  3. In a separate medium bowl, whisk together pumpkin puree, sugar, melted butter, egg, milk, and vanilla extract until smooth.
  4. Pour wet ingredients into dry ingredients. Fold gently with a rubber spatula until just combined (a few lumps are fine). Do not overmix.
  5. Transfer batter to a piping bag or zip-top bag with corner snipped. Pipe batter into donut cavities, filling each about ⅔ to ¾ full.
  6. Bake for 9 to 12 minutes, until donuts spring back when touched and a toothpick inserted comes out clean or with a few moist crumbs.
  7. Let donuts cool in pan for 2 to 3 minutes, then turn out onto a cooling rack.
  8. While donuts cool slightly, melt 4 tablespoons butter in a small bowl. In a shallow dish, whisk together ½ cup sugar and 2 tablespoons cinnamon.
  9. While donuts are still warm, brush each generously with melted butter on all sides, then immediately roll in cinnamon sugar mixture, pressing gently to adhere.
  10. Serve immediately or store uncoated donuts in an airtight container at room temperature for up to 2 days. Coat just before serving for best crunch.

Notes

For best results, use room temperature ingredients. Don’t overmix the batter. Check donuts at 9 minutes to avoid overbaking. For extra crunch, double coat with butter and cinnamon sugar. Store uncoated donuts for longer shelf life; coat just before serving.
