  • 10 ounces mini marshmallows (about 5 cups)
  • 6 cups crispy rice cereal
  • 1 ½ cups candy corn, divided
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt (optional)

Instructions

  1. Line a 9×13-inch baking pan with parchment paper, leaving about 2 inches of overhang on the long sides. Lightly spray the parchment with non-stick cooking spray.
  2. Place a large pot or Dutch oven over medium-low heat and add 6 tablespoons of unsalted butter. Let it melt slowly, swirling occasionally, until fully melted but not bubbling or browning.
  3. Pour in 10 ounces of mini marshmallows (about 5 cups). Stir constantly with a rubber spatula as they melt, about 3-4 minutes, until smooth and glossy with no white streaks.
  4. Remove the pot from heat immediately. Stir in 1 teaspoon of vanilla extract and ¼ teaspoon of salt (if using).
  5. Pour in 6 cups of crispy rice cereal and 1 cup of candy corn. Fold gently until everything is evenly coated. Do not overmix.
  6. Scrape the mixture into the prepared pan. Use a spatula or wet hands to spread it into an even layer.
  7. Press the mixture firmly into the pan using a piece of parchment paper on top for even pressure.
  8. While the mixture is still warm (but not hot), press the remaining ½ cup of candy corn into the top in a decorative pattern.
  9. Let the treats cool at room temperature for at least 1 hour until fully set.
  10. Once set, lift the entire block out using the parchment overhang. Place on a cutting board and cut into 24 squares (about 2 inches each) using a sharp knife or bench scraper.

Notes

For best results, use mini marshmallows for even melting. Add candy corn in two stages to prevent melting. Wet hands with cold water to prevent sticking when pressing mixture. These treats taste best on day two. Store in an airtight container at room temperature for up to 3 days. For humid climates, add a piece of bread to the container to keep treats crispier. Can be frozen for up to 2 months.
