This Easy Cheesy Crockpot Casserole is a simple, 5-ingredient dinner that practically makes itself. With ground beef, frozen hash browns, cheddar cheese, and cream of mushroom soup, it’s a budget-friendly, crowd-pleasing meal perfect for busy nights.

  • 1 pound ground beef (80/20 works best)
  • 1 (30-ounce) bag frozen shredded hash browns
  • 2 cups shredded cheddar cheese (sharp cheddar recommended)
  • 1 (10.5-ounce) can cream of mushroom soup
  • 1/2 cup milk (whole milk preferred)
  • 1/2 cup diced onion (optional)
  • 2 cloves garlic, minced (optional)
  • 1/2 teaspoon black pepper (optional)
  • 1/2 teaspoon salt (optional)

Instructions

  1. Brown the ground beef in a large skillet over medium-high heat, breaking it up as it cooks, for 6-8 minutes until no longer pink. If using onion and garlic, add them during the last 2 minutes. Drain the fat.
  2. Spray the inside of a 6-quart slow cooker with non-stick cooking spray.
  3. Layer half the frozen hash browns evenly in the bottom of the crockpot. Top with half the cooked ground beef. Sprinkle half the shredded cheese over the beef. Repeat layers with remaining hash browns, beef, and cheese.
  4. In a small bowl, whisk together the cream of mushroom soup and milk until smooth. Pour evenly over the top of the casserole. Do not stir.
  5. Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours, until bubbly and hot through.
  6. Turn off the slow cooker and let the casserole rest uncovered for 10 minutes before serving.

Notes

Don’t thaw the hash browns; frozen works best. For crispy top, remove lid and cook on HIGH for last 30 minutes. Shred cheese from a block for best melting. Leftovers keep in fridge for up to 4 days or freeze for up to 3 months.
