This creamy, tangy, and spicy buffalo chicken dip is made entirely in the slow cooker with minimal effort. Perfect for game day, potlucks, or any gathering, it features tender shredded chicken, cream cheese, ranch dressing, and cheddar cheese.

  • 2 boneless, skinless chicken breasts (about 1.5 pounds)
  • 8 ounces cream cheese, softened and cubed
  • 1 cup ranch dressing
  • 1/2 cup buffalo hot sauce (e.g., Frank’s RedHot)
  • 1 cup shredded cheddar cheese
  • 1/4 cup crumbled blue cheese (optional)
  • Tortilla chips, celery sticks, carrot sticks, or crusty bread for serving

Instructions

  1. Place the chicken breasts in the bottom of the slow cooker in a single layer.
  2. Cube the softened cream cheese and scatter it over the chicken.
  3. Drizzle the ranch dressing and buffalo hot sauce over the cream cheese and chicken.
  4. Cover and cook on low for 2-3 hours, or on high for 1.5-2 hours, until the chicken reaches an internal temperature of 165°F and shreds easily.
  5. Remove the chicken from the slow cooker and shred it with two forks or a hand mixer on low speed.
  6. Return the shredded chicken to the slow cooker, add the shredded cheddar cheese (and blue cheese if using), and stir until the cheese is fully melted.
  7. Switch the slow cooker to the ‘warm’ setting and serve hot with tortilla chips, celery, carrots, or bread.

Notes

For best texture, serve within 30 minutes of adding cheese. To control heat, start with 1/4 cup hot sauce and adjust. Leftovers keep in the refrigerator for up to 4 days; reheat with a splash of milk. Do not freeze.
