Easy Crockpot Chicken Breast Tacos (Easy 3-Ingredient Recipe)

Five minutes of prep time, then your crockpot does the rest. This easy 3-ingredient recipe delivers incredibly tender, flavorful chicken for perfect taco night without the fuss.

  • 1.5 to 2 pounds boneless, skinless chicken breasts
  • 16-ounce jar salsa (salsa verde or red salsa)
  • 1 packet (about 3 tablespoons) taco seasoning
  • Juice of 1 lime (optional)
  • Fresh cilantro, chopped (optional)
  • Corn or flour tortillas, warmed
  • Toppings: shredded lettuce, diced tomatoes, shredded cheese, sour cream, avocado, pickled jalapeños (optional)

Instructions

  1. Pat the chicken breasts dry with paper towels. Place them in a single layer at the bottom of your crockpot.
  2. Sprinkle the taco seasoning evenly over the chicken breasts and rub it in.
  3. Pour the entire jar of salsa over the seasoned chicken, spreading it so the chicken is mostly submerged.
  4. Cover and cook on low for 4 to 5 hours or on high for 2.5 to 3 hours, until the internal temperature reaches 165°F.
  5. Remove the chicken from the crockpot using tongs and shred with two forks.
  6. Return the shredded chicken to the crockpot with the salsa juices and stir. Let it sit on warm for 10 to 15 minutes.
  7. Squeeze lime juice over the chicken and stir. Garnish with fresh cilantro.
  8. Warm tortillas in a dry skillet, over a gas flame, or in the oven.
  9. Assemble tacos by spooning the chicken into warm tortillas and adding desired toppings.

Notes

Do not skip returning the shredded chicken to the salsa juices for maximum flavor. For best results, cook on low and slow. Use a meat thermometer to avoid overcooking. Leftovers keep well for up to 4 days in the refrigerator or freeze for up to 3 months.
