Easy Crockpot Game Day Queso with Chorizo

This creamy, flavorful queso with chorizo is made in the slow cooker for a set-it-and-forget-it party dip that stays warm for hours. Perfect for game days, potlucks, or any gathering.

  • 1 pound ground chorizo (casings removed if using links)
  • 1 (16-ounce) block Velveeta, cut into 1-inch cubes
  • 1 (8-ounce) block cream cheese, softened and cubed
  • 1 (10-ounce) can Rotel diced tomatoes and green chiles, undrained
  • 1 cup whole milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika (optional)
  • ¼ teaspoon cayenne pepper (optional)
  • Fresh cilantro, chopped (for garnish)
  • Jalapeño slices (for garnish)

Instructions

  1. Brown the chorizo: Heat a large skillet over medium-high heat. Add the ground chorizo and break it apart with a wooden spoon. Cook for 6-8 minutes, stirring occasionally, until browned and crispy on the edges. Use a slotted spoon to transfer to a plate lined with paper towels to drain.
  2. Prepare the crockpot: Spray the inside of a 6-quart slow cooker with non-stick cooking spray.
  3. Cube the cheeses: Cut the Velveeta and cream cheese into 1-inch cubes.
  4. Layer the ingredients: Add the cubed Velveeta to the crockpot, followed by the cream cheese. Pour the undrained Rotel over the top. Add the milk, garlic powder, onion powder, smoked paprika, and cayenne (if using). Do not stir.
  5. Cook on low: Cover and cook on LOW for 1 hour. Remove lid and stir. If cheese is not fully melted, cover and cook for another 15-20 minutes.
  6. Add the chorizo: Once the cheese mixture is smooth, add the drained chorizo and stir well to distribute.
  7. Adjust consistency: If too thick, stir in an additional ¼ cup of milk. If too thin, cook uncovered for 10-15 minutes to thicken.
  8. Keep warm: Switch the crockpot to the WARM setting. Stir every 30 minutes to prevent a skin from forming.
  9. Garnish and serve: Just before serving, sprinkle chopped cilantro and jalapeño slices over the top. Serve directly from the crockpot with tortilla chips.

Notes

Brown the chorizo first for best flavor. Drain thoroughly to avoid greasy queso. Use low heat to prevent graininess. Queso can be made ahead and reheated on LOW for 30 minutes with a splash of milk.
