These Easy Crustless Ham and Cheese Lunchbox Roll-Ups are a quick, no-cook lunch solution made with just five simple ingredients. Perfect for meal prep, they are naturally crustless, kid-approved, and hold up beautifully in a lunchbox.

Ingredients

Scale
  • 8 slices of ham (deli-style, thinly sliced; preferably Black Forest ham)
  • 4 oz cream cheese (softened to room temperature)
  • 1/2 cup shredded cheddar cheese (sharp cheddar recommended)
  • 1 tablespoon Dijon mustard (optional)
  • 1/4 teaspoon garlic powder
  • 8 small lettuce leaves (optional, for crunch)

Instructions

  1. Prepare the cream cheese filling: In a small mixing bowl, combine the softened cream cheese, shredded cheddar cheese, Dijon mustard, and garlic powder. Mix until smooth and well combined.
  2. Lay out the ham slices: Place a slice of ham flat on your cutting board. Pat it dry with a paper towel if needed.
  3. Spread the filling: Using a butter knife or offset spatula, spread about 1 tablespoon of the cream cheese mixture evenly over the ham slice, leaving a small border (about 1/4 inch) around the edges.
  4. Add the lettuce (optional): If using, place a small lettuce leaf at one end of the ham slice.
  5. Roll it up tight: Starting at the end with the lettuce (or simply one end), roll the ham slice tightly into a log. Use your fingers to keep the roll snug.
  6. Chill for 10 minutes: Place the rolled ham logs on a plate and cover with plastic wrap. Refrigerate for at least 10 minutes.
  7. Slice into pinwheels: Using a sharp knife (serrated works best), slice each log into 1-inch thick pieces. Wipe the knife clean between cuts for neat slices.
  8. Serve or pack: Arrange the roll-ups on a plate for immediate snacking, or pack them directly into lunchboxes.

Notes

For best results, use room temperature cream cheese to avoid tearing the ham. Chill the logs for at least 10 minutes before slicing to ensure clean cuts. Store unsliced logs in an airtight container in the refrigerator for up to 3 days. Do not freeze.
