Easy Fall Charcuterie Board: Honeycrisp Apples & Brie

  • 8 oz double or triple-cream brie cheese
  • 4 oz prosciutto, thinly sliced
  • 4 oz hard salami (such as soppressata or genoa), sliced
  • 2 large Honeycrisp apples, cored and sliced into thin wedges
  • 1 Bosc pear, sliced
  • 1/2 cup dried figs or dates
  • 1/2 cup dried cranberries
  • 1/2 cup marcona almonds
  • 1/2 cup candied pecans or walnuts
  • 1/2 cup pumpkin seeds (pepitas), toasted
  • 1/4 cup good quality honey
  • 2 tbsp fig jam or apple butter
  • 1 small baguette, sliced into thin rounds and lightly toasted
  • 1 box of good crackers (such as water crackers or multigrain)
  • Fresh rosemary sprigs and edible flowers for garnish (optional)
  • Flaky sea salt (such as Maldon)
  • Freshly cracked black pepper

Instructions

  1. Take the brie out of the refrigerator 30 minutes before serving to let it come to room temperature.
  2. Wash and slice apples and pear into thin wedges (about 1/4 inch thick). Toss with lemon juice if making ahead to prevent browning.
  3. Toast baguette slices: arrange on a baking sheet, brush lightly with olive oil, and toast at 375°F for 5-7 minutes until golden. Let cool completely.
  4. Arrange the brie on a large wooden board, slightly off-center.
  5. Add small bowls or ramekins for honey, fig jam, and nuts.
  6. Layer the meats: fold prosciutto into loose ribbons and roll salami slices into cylinders. Distribute in clusters around the board.
  7. Arrange the fruit: fan out apple and pear slices in overlapping rows. Tuck dried figs/dates and cranberries into gaps.
  8. Add the crunch: sprinkle almonds, candied pecans, and pumpkin seeds into remaining empty spaces.
  9. Place crackers and bread in small stacks or lines around the perimeter of the board.
  10. Drizzle honey over the brie and sprinkle with flaky sea salt. Add rosemary sprigs and edible flowers for garnish.
  11. Serve immediately or within 2 hours. If refrigerated, let sit at room temperature for 20 minutes before serving.

Notes

For best results, let brie come to room temperature before serving. If brie is still firm, microwave for 10-15 seconds. Don’t overcrowd the board; leave breathing room between items. Arrange no more than 2 hours before serving to prevent apples from browning and crackers from getting stale. For a vegetarian version, skip meats and add roasted red peppers, grilled artichoke hearts, and marinated mushrooms.
