A quick and easy fall snack mix combining crispy Chex cereal, salty pretzels, and sweet candy corn, all coated in creamy white chocolate. Perfect for Halloween parties, Thanksgiving gatherings, or cozy nights in.

  • 9 cups Rice Chex cereal (or Corn Chex)
  • 3 cups pretzel twists
  • 2 cups roasted salted peanuts (optional)
  • 1½ cups candy corn
  • 1 cup candy pumpkins (Autumn Mix)
  • 16 ounces white chocolate melting wafers
  • 2 tablespoons coconut oil or vegetable shortening
  • ½ teaspoon vanilla extract
  • Flaky sea salt (for finishing)
  • ½ teaspoon pumpkin pie spice (optional)

Instructions

  1. Line a large baking sheet with parchment paper or wax paper.
  2. In a large microwave-safe bowl, combine Rice Chex cereal, pretzel twists, and peanuts (if using). Gently stir to distribute evenly.
  3. In a separate microwave-safe bowl, melt white chocolate wafers and coconut oil in 30-second intervals, stirring after each, until smooth. Stir in vanilla extract.
  4. Drizzle melted white chocolate over the cereal mixture. Gently fold with a spatula until evenly coated (20-30 folds).
  5. Let the mixture cool for 2-3 minutes, then gently fold in candy corn and candy pumpkins.
  6. Pour mixture onto prepared baking sheet and spread into an even layer. While chocolate is still wet, sprinkle with flaky sea salt and pumpkin pie spice (if using).
  7. Let cool completely at room temperature for 30-45 minutes until set.
  8. Break into clusters and store in an airtight container.

Notes

White chocolate burns easily; use 50% power and stir frequently. Add candy corn only after chocolate has cooled slightly to prevent melting. For best results, let mix sit overnight before serving. Store in airtight container at room temperature for up to 2 weeks or freeze for up to 3 months.
