A quick and easy summer dessert featuring fresh strawberries, buttery shortcake cubes, and a tangy-sweet cream cheese dip, perfect for parties and casual gatherings.

Ingredients

Scale
  • Fresh strawberries, hulled and halved or quartered if large
  • Shortcake or biscuit cubes (store-bought or homemade)
  • 8 oz softened cream cheese
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 23 tablespoons heavy cream or Greek yogurt (optional, for thinning dip)
  • Fresh mint leaves (optional, for garnish)

Instructions

  1. Wash strawberries thoroughly and hull them. Cut larger berries into halves or quarters to make bite-sized pieces.
  2. Cut shortcake or biscuits into roughly 1-inch cubes.
  3. In a medium bowl, beat softened cream cheese with powdered sugar and vanilla extract until smooth and creamy. Add heavy cream or Greek yogurt if a lighter dip is desired, mixing until fluffy but thick enough to hold shape.
  4. Thread skewers with a pattern starting with a shortcake cube, then a strawberry piece, repeating until the skewer is full but not overcrowded (3-4 pieces per skewer). Leave space at the bottom for handling.
  5. Optionally chill assembled skewers on a platter for 10-15 minutes before serving. Garnish with fresh mint leaves.
  6. Serve skewers with cream cheese dip in a small bowl or ramekins for dipping. Optionally spread dip on shortcake cubes before skewering.

Notes

Use firm, ripe strawberries to avoid soggy shortcake. Soften cream cheese before mixing for a smooth dip. Assemble skewers shortly before serving to prevent sogginess. For gluten-free, use almond flour shortcake or gluten-free biscuits. For dairy-free dip, use coconut cream and dairy-free cream cheese.
