These easy frozen yogurt bark bites are a quick, healthy, and customizable lunchbox snack made with Greek yogurt, berries, chocolate chips, and nuts. They stay frozen until lunchtime and are a crowd-pleaser for both kids and adults.

Ingredients

  • 2 cups Greek yogurt (full-fat preferred)
  • 23 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 cup mixed berries (fresh or frozen)
  • 1/4 cup chocolate chips or cacao nibs
  • 1/4 cup chopped nuts or seeds
  • 2 tablespoons unsweetened shredded coconut (optional)
  • Pinch of sea salt (optional)

Instructions

  1. Line a baking sheet with parchment paper or a silicone mat.
  2. In a medium bowl, combine Greek yogurt, honey or maple syrup, and vanilla extract. Stir until smooth.
  3. Spread the yogurt mixture onto the prepared baking sheet into an even rectangle about 1/4-inch thick.
  4. Sprinkle mixed berries, chocolate chips, nuts or seeds, and shredded coconut evenly over the yogurt. Press toppings gently into the yogurt.
  5. Add a pinch of sea salt if using.
  6. Freeze for at least 3-4 hours, or until completely solid.
  7. Once frozen, lift the parchment paper off the baking sheet. Break the bark into pieces using a sharp knife or your hands.
  8. Transfer pieces to a freezer-safe container, layering with parchment paper. Store in the freezer.

Notes

Use full-fat Greek yogurt for creamier texture. Press toppings firmly into yogurt to prevent them from falling off. Freeze until completely solid before breaking. Store in freezer for up to 3 weeks.
