Easy Garlic Butter Steak Bites & Mashed Potatoes

Quick and easy garlic butter steak bites served over creamy mashed potatoes. A budget-friendly, kid-approved weeknight dinner that comes together in about 30 minutes.

Ingredients

  • 1.5 lbs sirloin steak or top round, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika (optional)
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • 2 lbs Yukon Gold potatoes, peeled and quartered
  • 4 tablespoons unsalted butter
  • 1/2 cup whole milk, warm
  • 1 teaspoon salt
  • 1/4 teaspoon white pepper

Instructions

  1. Place the peeled and quartered Yukon Gold potatoes in a large pot and cover with cold water by about an inch. Add a generous pinch of salt. Bring to a boil over high heat, then reduce to a simmer and cook for 12-15 minutes, or until fork-tender.
  2. While the potatoes are boiling, pat the steak cubes dry with paper towels. Toss with salt, black pepper, and smoked paprika if using.
  3. Heat olive oil in a large cast iron skillet over medium-high heat until shimmering. Add steak cubes in a single layer (cook in batches if needed). Sear undisturbed for 3 minutes, then flip and cook for another 2-3 minutes for medium-rare.
  4. Reduce heat to medium-low. Push steak to one side of the pan and add 3 tablespoons butter to the empty space. Let melt, then add minced garlic. Stir for about 30 seconds until fragrant. Toss steak bites in garlic butter to coat. Remove from heat.
  5. Drain potatoes and return to hot pot for a minute to let steam escape. Add 4 tablespoons butter and mash. Slowly pour in warm milk while mashing until desired consistency. Season with salt and white pepper.
  6. Spoon mashed potatoes onto plates, top with garlic butter steak bites, drizzle with remaining butter from pan, and garnish with fresh parsley. Serve immediately.

Notes

For the best sear, pat steak cubes very dry before seasoning. Do not overcrowd the pan; cook in batches if necessary. Let steak rest for a minute after cooking to keep juices inside. Warm the milk for mashed potatoes to avoid a gluey texture. Leftovers can be stored separately in the refrigerator for up to 3 days.
