A spooky, no-cook charcuterie board that comes together in under 20 minutes. Featuring a brie brain, salami roses, and creepy-cute decorations, it’s the perfect crowd-pleaser for Halloween parties.

Ingredients

  • Brie wheel (8 oz)
  • Sharp cheddar block (8 oz)
  • Smoked gouda (6 oz)
  • Pepper jack cheese (6 oz)
  • Salami (6 oz)
  • Prosciutto (4 oz)
  • Pepperoni (4 oz)
  • Whole wheat crackers (1 cup)
  • Pretzel sticks (1 cup)
  • Pita chips (1 cup)
  • Breadsticks (4-5)
  • Red grapes (1 cup)
  • Black olives (1/2 cup)
  • Cherry tomatoes (1/2 cup)
  • Cucumber slices (1/2 cup)
  • Baby carrots (1/2 cup)
  • Blackberry jam or fig preserves (1/4 cup)
  • Guacamole or spinach dip (1/2 cup)
  • Edible eyes (optional)
  • Fresh rosemary sprigs

Instructions

  1. Prep the Brie Brain (5 minutes): Take your brie wheel out of the fridge and let it sit at room temperature for 10 minutes. Using a small paring knife, score a zigzag pattern across the top of the wheel, about 1/4 inch deep. Gently peel back the top rind in small sections to reveal the creamy interior. Place the brie in the center of your board.
  2. Make the Salami Roses (5 minutes): Take 6-8 large salami slices. Overlap them slightly in a straight line, then roll them up tightly from one end. Gently pull apart the outer layers to create ‘petals.’ Secure the base with a toothpick. Place 2-3 salami roses around the board.
  3. Cut the Cheese Shapes (5 minutes): Using small cookie cutters, press ghost or bat shapes into the cheddar block. If you don’t have cookie cutters, cut the cheese into cubes or triangles. Arrange them in small clusters around the brie. Slice the smoked gouda into thin wedges and fan them out.
  4. Arrange the Meats (3 minutes): Drape the prosciutto in loose, wavy ribbons around the board. Pile the mini pepperoni in a small heap near one corner. Keep the meats separate from the cheeses.
  5. Add the Crackers and Crunch (3 minutes): Scatter the whole wheat crackers in small groups. Arrange the pretzel sticks in a fan pattern. Place the pita chips in a small stack near the dips. Break the breadsticks in half and arrange them like ‘monster teeth’ along one edge of the board.
  6. Place the Fruits and Vegetables (3 minutes): Cluster the red grapes in one corner. Scatter the black olives around the board, placing a few sliced ones on top of cheese cubes. Arrange the cherry tomatoes near the salami roses. Lay the cucumber slices in a single layer near the center. Place the baby carrots like little monster fingers pointing toward the brie brain.
  7. Fill the Ramekins (2 minutes): Spoon the blackberry jam into a small ramekin and place it near the center. Fill another ramekin with guacamole or spinach dip. Place a third ramekin with mixed olives. Set these bowls in empty spaces on the board.
  8. Add the Spooky Decor (2 minutes): Stick edible eyes on a few olives, cheese cubes, or the brie brain. Tuck fresh rosemary sprigs around the board. Add plastic spiders or bats if desired.
  9. Final Check (1 minute): Step back and look at your board. Fill any empty gaps with extra crackers, grapes, or olives. Serve immediately or cover with plastic wrap and refrigerate for up to 2 hours. If refrigerating, let it sit at room temperature for 15 minutes before serving.

Notes

Don’t overthink the brie brain; imperfections make it look more realistic. Keep meats and cheeses separate to avoid sogginess. Use color contrast (red, green, black) to keep the board visually interesting. Build from the center out. Serve at room temperature for best flavor. If making ahead, cover and refrigerate, then let sit at room temperature for 15-20 minutes before serving.
